what does the wisdom stat do? particularly for melee units? Not much. If your Fighter or Thief, or Balkoth uses a Potion of Wisdom, it provides a Wisdom bonus toward Crushing Blow, Critical Strike, Deadly Strike and Piercing attacks, if they're able to do these of course. Wisdom bonus is 1% per 10 Wisdom. For units that can Rally Troops, every 10 wisdom can override a level deficit. To rally troops, you must be greater level than the troops in the group. Warriors Rally Military Troops only.

I see - how about for mages? Also on a realated note. I leveled a chaos huntress to level 15 and her luck stat is still at 0. I believe that stat controls how often she performs critical hits. Is that normal?

I forgot that Wisdom also adds an experience multiplier.
1 + (Wisdom / 1000) is the experience multiplier bonus.
Multiplied by experience gained from combat.
Wisdom for mages adds Mana.
Luck is a tertiary stat and does not improve by level, or from other stats, only artifacts.

Basically the Wisdom experience bonus translates into this:
Every 10 Wisdom means +1% experience multiplier bonus.
You're in a party of 3. Victory is yours. The total experience gained for the party, before bonuses, is 3000.
3000 / 3 party members = 1000 individual experience.
The Wizard with 23 Wisdom instead receives: 1023.
Yes, it's not that big of a difference, but it can add up over time. I wanted Wisdom to provide some neat little bonus without making it all powerful.
